Richard & Jane Austen founded Hartley Truffles at their family farm in the Blue Mountains, New South Wales, Australia in 2007. 

Their two varieties of oak now produce beautiful Tuber melanosporum, also known as ‘black perigord’ or black winter truffle. With the help of their two Border Collie dogs they harvest fresh truffle during June, July and August for the domestic and export market.

Hartley Truffles also have a range of products that use their Truffles to make a truly unique flavour combination.

Australian grown black winter truffles from Hartley in the Blue Mountains.

Ian Hemphill, also known as Herbie, can’t remember when herbs and spices were not a part of his life. The younger son of John and Rosemary Hemphill, who pioneered Australia’s love of herbs and spices in the 1950’s, Ian earned his pocket money picking herbs and remembers many a season when the family home was strewn with bunches of drying culinary produce. Ian & Liz met at NIDA and married in 1970. Upon realising that herbs and spices were more interesting than acting, Ian worked with his parents for many years, and while their three daughters were growing up Liz worked in the Somerset Cottage shop in Dural. During the mid 1980’s Ian managed a spice company in Singapore before becoming a senior manager for a multinational food company in Australia in the 1990’s. In 1997 Ian and Liz opened the specialty spice business in the Sydney suburb of Rozelle, which naturally was named after the nickname Ian had since school days,…..Herbie’s. Herbie’s Spices was founded to fill a need in the community of cooks and food lovers who wanted to access hard-to-find herbs and spices, have access to reliable information and be assured of the very best quality available in the world.  Herbie and Liz are now enjoying sharing their extensive knowledge and experience with food lovers in Australia and overseas.

Herbie’s Spices is a family owned Spicery based in Charmhaven, NSW. They provide a range of quality dried herbs, spices and unique, all-natural spice blends.

For us the conservation of critically endangered Box Gum Grassy Woodland and the restoration of native grass pastures is as important as the raising of excellent quality grass-fed Lamb and Beef raised with  great care and low stress.

We came to farming by being foodies and environmentalists first and this background drives all our farming decisions.

Our Grass-fed Dorper Lamb has been featured in the delicious. Produce Awards in '20 and '21 and in '22 our farm and on-farm accommodation was a finalist in the Banksia Foundation National Sustainable Tourism Awards.

Highfield Farm & Woodland

Riverina, NSW

We uniquely combine farming grass-fed Dorper Lamb and Dexter Beef with the conservation of critically endangered habitat and regeneration of native grasslands.

Holbrook Paddock Eggs is owned and operated by Sam and Prue Pincott and their four daughters. The property is located in southern NSW near the township of Holbrook (mid way between Sydney and Melbourne on the Hume Hwy).

Our 15,000 hens are managed under a portable system whereby we move their housing each week onto a fresh part of the paddock, enabling the pasture and all the biology within it to be replenished for the hens. The added benefit to this is that the hens’ manure provides a natural fertiliser for the paddocks as they move across them. The hens are fully integrated into our whole farm and are managed along side other livestock enterprises. The farm is managed under regenerative farming practices.

The hens have the true ability to live a very natural life – we don’t lock our hens up at night, instead we have 9 Maremma dogs and live with them and protect against any predators. This means that as the sun comes up the hens are free to roam and forage when ever they like, for as long as they like. They have so much space to live a truly free range life – our stocking density is an incredibly low 40 hens per hectare (compared to the industry standard of 10,000 hens per hectare).

We are PROOF accredited, giving our customers genuine assurance we are what we say.

No artificial additives are used in our feed, the colour of our yolks will vary slightly as the seasons change – exactly as nature intended.

All eggs are graded and packed according to the Australian Egg Standards and delivered within days of being laid.

The welfare of the animals is our priority along side farming in a more natural state, this combination provides a high quality egg coming from very happy, healthy hens.

Imbue distillery’s inaugural gin - a smooth wheat-based spirit starring locally abundant, foraged botanicals from Melbourne’s fringe suburbs. Suburban Gin is boldly spicy, with the unmistakable pine aroma of juniper and the nutty warmth of coriander. Sunflower seed oils carry the grassy fennel and ginger heat through a burst of lemon to a crisp finish.
