We are passionate about figs...

Australia grows beautiful figs — plump, juicy, full-flavoured and with jewel-like pink centres that make even the simplest meal feel like a medieval feast. Unfortunately, the season is painfully short and fresh figs are a bugger to transport. Dried figs are the obvious answer. However Australians are used to the bland, grey imported product that are squashed flat and dried hard for their long journey in a shipping container.

At Singing Magpie we saw a huge opportunity to bring local foodies Australian semi-dried figs. Our figs are naturally sun-dried to retain their best figgy qualities, including intense flavour and a decadent chewy, stickiness that blends beautifully with many texture and flavour combinations. Our figs have no additives. We hand pick them, dry them in the beautiful Riverland sun and ship them to you — that’s it!

The plan started small with our semi-dried figs and quinces. Our range has now been expanded to include sticky quince syrup/figs, other local sun dried produce, fruit enrobed in premium dark chocolate couverture and boutique giftboxes.

Solomons Gold is an Australian family owned cacao social enterprise and for over a decade they’ve been working with cocoa growers and local landowners in the Solomon Islands to assist them to produce one of the world’s purest forms of single origin cacao, whilst also improving their standard of living. 

Solomons Gold founder, Clive Carroll first visited the Solomon Islands back in 2004, with a view to being involved in the growing and processing of cocoa, when his love of dark chocolate became more than a passion. Clive came across a group of run-down cocoa plantations, and with agriculture firmly in his DNA from his father’s avocado farms, it ignited a passion to bring these cocoa plantations back to life. 

It was a long, slow process of transforming neglected plantations while also building new infrastructure for local village farmers. Clive also established a cocoa buying, processing and cocoa export business, and at the same time provided numerous farmers with technical advice and financial support to enable them to improve, not only the quality of their cocoa but their quality of life. 

Today, they are one of the few chocolate companies in the world that control the entire process - from harvesting the cacao pods, hand grading the beans right through to handcrafting their bean to bar chocolate and cacao products. This bean to bar approach and their attention to quality ensures that they are able to consistently produce a premium, totally natural, single origin chocolate. They know where all their ingredients come from and only the best are selected.

They proudly use only organic ingredients and their products are 100% free of allergens (no dairy, gluten, nuts, soy) and are produced in their Kosher and HACCP certified factory. Their chocolate is some of the cleanest labels you will find on the market and their chocolate is made from only 2 ingredients - simply cacao + organic coconut sap sugar. They also produce a cacao + organic sugar formulation. 

Being a bespoke producer, they can also tailor their chocolate to whatever their client’s requirements are (ie: 60%, 80%, 100% cacao etc) and also tailor spec sizes for the nibs.

The beautiful, coastal town of Mount Maunganui in New Zealand is the perfect location for their chocolate factory not only because of its close proximity to the cacao plantations but it seemed fitting to establish the Solomons Gold brand in the beautiful ‘clean and green’ New Zealand.  They work with a variety of gourmet and Vegan food producers as well as chefs in both New Zealand and Australia. Solomons Gold chocolate has won silver and bronze awards at the Academy of Chocolate Awards in London in 2017 and 2018.

The Solomon Islands close location to the equator means their cacao flourish in perfect natural conditions, and the natural growing methods and pristine ecosystem speaks for itself in terms of the flavour and quality of their beans. From the cacao plantations to their grading facility in Honiara, Guadalcanal, only the finest chocolate grade cacao beans are hand-selected and dried. Less than 5% of the total cocoa volume they handle is deemed good enough quality for Solomons Gold chocolate. They select only the very best beans. 

The beans are then shipped to their chocolate factory in NZ where every step of the bean to bar process is carefully completed by hand. The cacao is roasted, cracked, winnowed, conched and tempered in small batches, using traditional artisan techniques. For Solomons Gold, it is what they don’t put into their chocolate that makes them special. 

For well over a decade Clive and his team have been working on the ground in the Solomon Islands and have been operating as a family owned social enterprise with the goal to assist local landowners and village cacao growers. Along the way there has never been a dull moment - whether it be travelling to extremely remote locations in the Solomon Islands to source cacao, working with Tribal village communities or seeing the destructive force of cyclones that have struck the region over the years. Through it all Clive has never lost focus on ensuring 100% sustainability and building a stable and a long-term cacao industry to benefit future generations of the Solomon Islands cocoa community. Today, it is these communities that remain at the very heart of the company and their passion for making chocolate.

Spiralz Fermented Foods

Central Coast, NSW

Springhill is a small family-owned farm at Mount Rivers NSW located in the foothills of the Barrington Tops and fronting the Paterson River. We are about 3km downstream from Lostock Dam which ensures the Paterson river is one of the most reliable and pristine water sources in the state. River water is pumped to a header tank which then feeds our troughs in the paddocks for the cattle.

We farm using regenerative practices and have a focus on soil health and building soil carbon so we use organic liquid fertilisers on our pastures to build soil biology and over sow pastures with mixed species of plants. Cattle are moved frequently to ensure pastures can rest and regenerate.

We also have a cropping part of our farm where we sow mixed species crops such as rye, oats, vetch, clovers, and brassicas in the winter and millet, lab lab, cow peas, sunflowers, clovers, turnips, and sorghum in the summer. This ensures we can finish our cattle to a high consistent standard for our customers.

We use stud bulls selected for temperament and eating quality. Our calves are yard weaned and worked daily during weaning as we believe this creates stress-free animals for life and a better eating steak. We are also Meat Standards Australia certified which focuses on animal husbandry techniques to ensure our beef is high quality and consistent.

Springhill Beef

The Hunter, NSW

Located at Mount Rivers, Hunter Valley NSW, we run a herd of Angus and Angus cross cattle farmed using regenerative practices to produce grass-fed beef.



Ian Glen, founder of Stone Pine Distillery, has devoted his entire career to malting, brewing and distilling in Australia and abroad. Stone Pine Distillery is situated in Bathurst, 3 hours west of Sydney over the famous Blue Mountains. The Distillery is known for its unique range of seasonal gins, but also produces vodka, rums, liqueurs and brandy.

Ian's distilling philosophy is simple; he uses high quality raw materials and keeps processing to a minimum in order to showcase the natural flavours. Ian never uses additives or preservatives and uses locally grown produce. A 500L Knapp Lewer copper pot still, brought over from Tasmania, is used to distil the spirits. Using a copper still in the distillation process is particularly beneficial as it imparts flavour whilst removing sulfuric compounds, creating a smooth and delicious spirit.

Stone Pine Distillery operates with an environmental focus - the distillery is powered by renewable energy and recycled rainwater, which is collected onsite, is used where possible. 
Stone Pine’s flagship Dry Gin was awarded a prestigious silver medal at the International Wine and Spirit Competition in London in the London Dry Category. 

Ian also distills and ages high quality, small batch Rum. Commercial producers have dominated rum for a long time in Australia, so Ian saw an opportunity to develop the gap in the premium rum category.

Our Story

Taluca Park came about after we both decided to leave our Sydney lifestyles, a personal trainer and builder, to pursue our growing hobby of farming into a newfound lifestyle. Our parents both had farms, so farming was second nature. 

Our journey began with 30 chickens, 2 breeding sows, a boar, and cattle. 

After moving onto Franks parent's farm to test our methods of farming we decided this lifestyle was for us and our young family. 

Not long after we found our beautiful property that we now call Taluca Park and which is our home and our business. We are now living our dream raising over 400 pigs a year, 5000 egg layers, cattle, Jersey milking cows, goats, alpacas, and a very beautiful team of Maremma working dogs. We pride ourselves in transparent farming. Doing what we say, “Girls on Grass” “Pigs on Pasture”. This all part of how we run our farm. 

Having done Demeter biodynamic courses, holistic management courses and rotational grazing plans, we run our farm chemical free, where the animals live a stress free, happy lifestyle enjoying the sunlight all whiles regenerating the land and in return producing some amazing produce.
